Turkey breast is notorious for drying out, but a combination of a liquid equilibrium brine, low-and-slow smoke, and a rich butter bath guarantees tender, juicy slices every single time. Whether you are firing up an offset smoker, pellet grill, or charcoal kettle, this pitmaster method locks in moisture while building a rich mahogany crust.

By soaking the turkey breast in an aromatic salt and sugar brine overnight, we restructure the meat proteins to trap water molecules. Cooking at a steady 225°F to 250°F allows gentle heat transfer without wringing out juices, while an optional butter wrap during the final stretch delivers unbelievable flavor.

Home Icon Pit Notes

Pull Temp vs. Safe Temp

Always pull turkey breast from heat when the internal probe hits 160°F. Carryover heat while resting wrapped in foil will safely drive the internal temperature up to the FDA recommended 165°F without drying out the white meat.

Fruit Wood Selection

Avoid heavy woods like mesquite or hickory for poultry. Apple, cherry, or pecan wood provides a subtle, sweet smoke profile that complements lean turkey without imparting bitter notes or darkening skin excessively.

The Power of the Wet Brine

Brining alters muscle protein structures, allowing turkey breast to absorb liquid and hold onto it during cooking. Never skip the brine step if you want deli-style juicy slices.
