Ingredients

Home IconThe Steak & Marinade

  • 1.5 lbs - Skirt Steak: Trimmed of excess fat.
  • 1/4 cup - Olive Oil: For the base.
  • 1/4 cup - Soy Sauce: For salt and umami.
  • 2 - Limes: Juiced.
  • 3 cloves - Garlic: Minced.
  • 1 tsp - Cumin & 1 tsp Smoked Paprika: For that classic smoky depth.
  • 1/2 tsp - Chili Powder: For a hint of heat.

Home IconThe Veggies & Sides

  • 2 - Large Bell Peppers: Thinly sliced (mix colors for visual pop).
  • 1 - Large White Onion: Sliced into half-moons.
  • 2 tbsp - Neutral Oil: (Avocado or Vegetable oil) for the flat top.
  • 8-10 - Flour Tortillas: Small "street taco" or fajita size.
  • Toppings: Fresh cilantro, sour cream, avocado, and lime wedges.

Instructions

Marinate the Beef

  • Step 1
In a gallon-sized Ziploc bag or glass bowl, whisk together the olive oil, soy sauce, lime juice, garlic, and spices. Add the skirt steak, ensuring it's fully coated. Let it marinate in the fridge for at least 2 hours (but no more than 8, or the lime juice will break down the meat texture too much).

    Time:

    2 hours

Prep the surface

  • Step 2
Preheat your flat top griddle to high heat (about 450°F). You want the surface screaming hot to get a char without overcooking the center.

    Grill Temp:

    450°F

Sear the Steak

  • Step 3
Remove the steak from the marinade and pat it dry with paper towels (moisture is the enemy of a good sear). Lightly oil the griddle. Lay the steak down; it should sizzle loudly. Cook for 3–4 minutes per side until the internal temperature reaches $130^\circ F$ to $135^\circ F$ for Medium-Rare.

    Time:

    8 mins

    Probe Temp:

    130°F

Sauté the Veggies

  • Step 4
While the steak is resting, add a bit more oil to the other side of the flat top. Toss on the onions and peppers. Use your spatulas to keep them moving. Cook for 5–7 minutes until the edges are charred but the veggies still have a slight "snap."

    Time:

    5–7 mins

Toast the Tortillas

  • Step 5
Clear a spot on the griddle and lay down your tortillas for about 30 seconds per side until they are warm and slightly charred.

Assemble and Serve

  • Step 6
You might be tempted to use Flank steak, but Skirt steak has a higher fat content and a looser grain structure, which means it soaks up marinades better and offers a much "beefier" flavor when seared at high temperatures.
